Herbal Tea Gelatin

Are you looking for something sweet? If you are like me, you grew up with “jello” as a dessert or a snack. With my allergy to sugar and the health journey that I have been on for the past few years, I have had to learn how to be creative in order to get something similar. Now honestly, when it was first suggested that I make jello out of tea, I natually went, “Yeah right!” Surprisingly, the results have been wonderful and I have made yummy jello out of all types of fruity herbal tea and the sky is the limit.

  • 3 cups herbal tea
  • 1/4 cup lemon juice
  • 1.25 tsp powdered stevia
  • 3 tbsp gelatin

I really like the fruity herbal tea – but have used a green lavender tea with great success. Brew the herbal tea for about 5 minutes. Then mix all of your ingredients together with an immersion blender. Chill for at least 2 hours.

Due to my candida, I switched out the 1/4 cup maple syrup in the original recipe for 1.25 teaspoons of stevia. I also found that 2 tablespoons of gelatin gives this recipe a really nice consistency. 3 tablespoons of gelatin makes it like finger food for kids – a little too rubbery for my liking! 🙂 I also make the tea a bit stronger than normal (4 teaspoons of loose tea to make 3 cups) so that it has a nice burst of flavour when you eat it. You might need to play with the quantities of each ingredient in the recipe to get a taste and texture that you like. ENJOY!!!
